quinoa? with an upward inflection.

i was in the bulk part of the co-op and let the lever open for too long. the outcome was 10 cups of quinoa. ha. so i'm finding some good recipes and if you have some too please please comment them.

i use it in rice or as rice like in burritos/stir-fry dishes, and soups but never got any more creative than that. so bring it on!

Quinoa Salad Recipe

* 1 cup water
* 1 cup apple juice
* 1/2 tsp. cinnamon
* 1 cup quinoa, well rinsed and drained
* 2 large red apples, diced
* 1 cup chopped celery
* 1/2 cup dried cranberries (such as Craisins)
* 1/2 cup chopped walnuts
* 1 cup non-fat vanilla yogurt

Place water, apple juice, cinnamon and rinsed quinoa in a saucepan and bring to a boil over high heat. Reduce heat, cover and simmer until all of the liquid is absorbed, approximately 15 minutes. Cool, transfer quinoa to a large mixing bowl and refrigerate, covered, at least 1 hour.

Add apples, celery, dried cranberries and walnuts to quinoa. Mix well. Fold in yogurt. Serve immediately.

Serves 8.

some interesting things that people have told me about quinoa. it is really important that you give it a good rinse before making it because it has a poisonous coating on it. prolly nothing deadly, but still rinse it.

and apparently if you take a tupperware and line it with a paper towel, sprinkle a few quinoa pieces? on the paper towel and wet the paper towel. put the tupperware in your window sill to get some sunlight. in time they will grow! and create leaves that are like spinach, great for salads :)

red and yellow peppers (without seeds)
red and yellow onions
tomato
cucumbers
mango (optional)
quinoa
lemon juice
cilantro
salt, pepper

1/2 cup quinoa
1 cup water
2 tsp freshly squeezed lemon juice
2 tsp extra virgin olive oil
Kosher salt and fresh ground black pepper, to taste
1-2 tsp fresh mint leaves
1-2 tsp flat-leaf parsley
1 cup chopped ripe tomatoes
1 cup chopped cucumber
1/2 cup feta, crumbled

In a small sauce pan, bring the water to boil. Add quinoa, reduce heat to simmer, cover the pan, and cook 15 minutes or until the liquid is absorbed. Remove from heat and set aside, covered, for 10 minutes. In a small glass jar, combine lemon juice, olive oil, salt and pepper, and shake until the dressing is emulsified.

Combine quinoa, mint, parsley, tomatoes, and cucumber in a large mixing bowl. Pour in the dressing, and toss gently to combine. Transfer to a serving bowl, top with feta, and serve at room temperature.
