i was in the bulk part of the co-op and let the lever open for too long. the outcome was 10 cups of quinoa. ha. so i'm finding some good recipes and if you have some too please please comment them.
i use it in rice or as rice like in burritos/stir-fry dishes, and soups but never got any more creative than that. so bring it on!

Quinoa is gluten-free and considered easy to digest." some say it's flavorless, but i think it has nice hint of flavor. a little chewy sort of like couscous. i'm not sure about WI but in CA you can it is almost everywhere.
1part Quinoa 2parts water. cook together about 15min.
