Thank the Lord for vital wheat gluten! Put off from the idea of making my own seitan after starting with wheat flour this summer, my interest was renewed after adding water to vital wheat gluten. Thanksgiving Eve the power went out. At 10:36 the power flickered off and then on, and only a couple minutes later it completely went off. My mom made this dip tonight. It is incredible. If you love foods with lots of garlic, this is the dip for you. It has the consistency of hummous or guac, and faintly tastes of guac without the taste of avocado.
