I love food. Those of you who've met me know that I love food a wee bit too much, but that's for another day. But as much as I love it, I also hate it. I will walk into a grocery store intending to get ALL THE THINGS that I will MAKE and it will be delicious and great and nutritious. And...many times I walk right back out, empty handed. My family isn't really into 'summer' dishes outside of cooking on the grill. I love cooking, despite having no real patience for it.

Exciting! I make this a lot, but there are a lot of recipes so I kind of figured out spices I wanted. Palak Paneer. It's super easy to make and really good.

You. Me. Same when it comes to grocery stores and cooking (also spoiled by my mom, sister, and husband). I cook now and then, but not often enough to think of recipes off the top of my head...at least, not anything more complex than a tuna melt or grilled cheese sandwich which I think are perfect options year-round :P

I'm also quite the fruitatarian when my husband is at work because fruit is ready-to-eat ;)

One gadget I have that spices up the average sandwich is the panini press. Get some nice meat and cheese from the deli, slap it on fresh sliced French bread, and press. Voila! Fancy looking sandwiches. lol.

For summer, a simple salad of spinach, feta cheese, tomatoes and olive oil pops into mind. Or something with fresh mozzarella! Yum!

Mmm that makes me want a nice caprese salad (tomato, mozzerela, basil and olive oil). So easy even I can make it! haha

My top two easy things are mayo chicken (google it, I know it sounds weird but it's great and easy, just a lil messy in prep) and zucchini. My friend's mom got me on the zucchini and it's super easy, tastes great, and feels fresh. Marinate sliced zucchini (coins or slivers) in Italian dressing overnight then grill, bake, or sautee. So good!

I recently made a corn salad for a picnic- corn, diced red peppers, black beans, cilantro, salt, pepper, lime juice and olive oil. So easy, just eyeball it on all the ingredients.

Once the garden starts producing, I do gazpacho- tomatoes, cukes, green peppers, hot peppers, onions, salt, pepper, olive oil, water, and a little v-8 if the color looks off. Throw all the veggies in the blender, then add diced veggies, and a little of whatever fresh herbs you have- dill, cilantro, or basil (only choose one). Best ice-cold with a hunk of french bread.

Ooh, both of those sound very good and summery, thank you! And healthy, to boot! Plus the corn salad fits in with my current southwest/South American cuisine fixation. I shall try this!
