I love food. Those of you who've met me know that I love food a wee bit too much, but that's for another day. But as much as I love it, I also hate it. I will walk into a grocery store intending to get ALL THE THINGS that I will MAKE and it will be delicious and great and nutritious. And...many times I walk right back out, empty handed. I mostly eat cheese and crackers or salad or an avocado with a spoon for dinner, so I'm basically no help. But I think it's cool that you're working to improve in this area. Report back with the cool things you discover!

Avocado with a spoon?? I don't think I've ever had avocado just on its own. I hear ya on the cheese and crackers though, in fact I just had that last night lol.

What blackrabbit42 said. (I call the first one Stoplight Salad because of the colors.)

This is only good for cooler days, but it's easy and I make it a lot. Like most soups, it tastes better after sitting for a day, so if you have time on the weekend to make this, it can sit till later in the week: Lentil Stew with Spinach and Potatoes (I usually leave out the cayenne, and water's okay instead of broth.)

It's Levantine cuisine if that helps it seem more exotic *g* (an Ottolenghi recipe, though I simplified it a bit because I am a lazy cook).

That actually sounds pretty good! Though I have to admit I had to Google courgette because I'd never heard that word before. Going by the fact that it was grated I expected it to be a cheese but nope! Zucchini! And now not only do I have something new to try, I learned a new word, so thank you! :D

I am definitely going to make these!

Yeah, we use the French, you use the Italian, apparently there's no actual English word for this vegetable. I'm sure it means something linguistically fascinating. *g*

You sound like me! I love to bake but cooking... not so much. My mom is a great cook, although she likes stuff well-done and I don't. It's hard to get excited about cooking for one, so I'll invite friends over and try to cook for them but I'm always afraid to try anything too ambitious and screw it up and embarrass myself, LOL. Most of them have kids and they cook all the time. I'm really good at heating stuff up. ha. I'm not into gadgets; they take up too much room in my tiny kitchen, and cleanup sucks.

I try to do summer stir-fry's, with lots of grilled veggies and some chicken thrown in, or maybe shrimp or tuna. Zucchini, mushrooms, peppers, green beans, onions... whatever's crunchy and will hold up without turning to mush.

Our Wed-night dinner plans sounds perfect for your current "theme" of food! My mouth was watering just reading the menu. Whoo!!
