That's funny, someone right next to me said "WHAT?!" when I was watching that part too :D I said it in my head only. Seemed like kind of a weird way to go to me, but the "I have nothing to say on the matter" kinda made it worth it

I have Questions about Spock and Uhura, but mostly I thought it was a decent choice if they needed to include a romantic subplot. I also, uh, may have read a few spoilers, so it wasn't much of a surprise for me.
The cast was, yeah, unexpectedly impressive. I'd been boggling at it for a while but the film definitely delivered (and as for the scene where Bones smuggles Kirk aboard and goes on to inject him repeatedly - this makes it even funnier).
I hadn't heard about that at all. I'll definitely have an eye out for him the next time I see it ... not like I really need an excuse ;-)
The timeline split was a really good idea. Basically the film is just the birth of a new reality, and since alternate realities aren't anything new to Trek (mirrorverse, anyone?) it makes all the sweeping changes much easier to swallow. Of course, I was just watching an episode of TNG the other day - with Spock trying to reunify the Vulcans and Romulans - and all I could think, during the entire episode, was, "And then Romulus blows up!"
I found a clip of the cameo I was talking about, and sadly his head isn't even in the shot. It's totally him though.
The alternate reality thing is actually the most realistic result of time travel as well. Most of the other hypothetical models don't make a whole lot of sense. In fact, I don't know what it was, but somehow I got a more realistic feel in general from this movie. Maybe it was the lack of nonsensical technobabble.
I wonder if there's any chance we'll see another movie with this cast?
