I've never flown delta, but the one time I flew, I was by myself, sitting next to a stranger, and I was having the same concerns you are (you and I wear about the same size on both top and bottom). My biggest fear was that someone would say I was too fat and make me buy another seat or some such thing.
Honestly, it was not NEARLY as bad as I feared it would be. The seat belt did just barely fit (and more over may lap than across my tummy) but no one noticed and the guy next to me didn't seem to be concerned. I think since you'll (I'm assuming) be sitting next to your uncle, you have nothing to worry about-- he'll understand.
Also, I've seen people mention here before that you can purchase seat belt extenders to carry with you on the plane, though you have to make certain it matches the type of seatbelt Delta uses.
We're about the same measurements (except I'm a 24 across the board) and have had no problem flying with Delta.
I do recall the seat being a bit cramped, but that was more a legroom thing than anything else. I remember being able to fasten the seatbelt across my lower belly/lap at it's fullest extension with a minimum of fuss. I was sitting in the window seat with my fiance next to me.
If you can request the window seat I'd recommend it. I felt it gave me a little bit more shoulder/wiggle room.

I flew Delta when I was a 22 and didn't have any problems. This was maybe two years ago now, but I don't think too much has changed. The seatbelt fit across me fine, and I carry a lot of weight in my stomach and apron area. As mentioned you can buy your own extender, which might give you some peace of mind.

When they measure the seats, I feel like they measure between the armrests, but in reality the chair is a little bigger and your butt has more wiggle room.
