I like your analysis of the first picture -- very insightful! I'm thinking Protective!Jack in the postures, since if you look carefully you'll notice that both Ianto and Gwen are behind the spread of Jack's feet (Ianto more than Gwen)as if Jack is both shielding Ianto and trying to restrain Gwen from charging off into harm's way.
That trio picture is also my favorite because it is, in my opinion, damn sexy. Ianto represents the past, Jack represents the present, and Gwen represents the future. The movement of the poses moves that way, too, if you follow their touches. At least that's how I view it.
And yes to submissive Ianto! I don't follow that usual leader is dominant, subordinate is submissive thing, but I always saw Ianto as submissive from Cyberwoman in the way he so smoothly slid to his knees for Jack.
I'm also not a fan of the COE publicity of Jack/Ianto. Something about them just didn't appeal to me. But I can at least herald the fact that they were, in fact, publicity photos that were used (regardless of the outcome of the series) which is, as you say, more than can be said for any other show.
I wish Ianto had kept up the "Sir" as well. I wonder if it was to show the change in their relationship when it was dropped, but then an element I could actually grasp was dropped along with it.
Ianto is exactly right in his physical attitude and shielded emotional affect. His body relates directly and only to Jack; there would be no reason for him to sit like that if Jack weren't there, the curve of his torso, and bowing his head almost as if in prayer. Ianto has nothing else but Jack.
That's also the picture that told me we were going to be losing him.
