OOH, I bet that'd be good to make brats with- I cut up an onion, add ketchup and mustard and pour in beer and add brats until it simmers a bit, then grill the brats. The beer makes all the difference! YUM!

Wow, isn't that ambitious? Are you going to "dry their (your) malt over fires made from beechwood logs"?

is it? * shrug * beer is beer. why not try to make the best beer that you can?

I don't dry my own malt, so no, I won't do that. I'm thinking I'll add some smoked wood pieces into the mash, that should do the trick.

I guess I don't know anything about making beer. I don't know how much you can deviate from the recipe and what comes out in the end still be potable. Good luck though!
