OOH, I bet that'd be good to make brats with- I cut up an onion, add ketchup and mustard and pour in beer and add brats until it simmers a bit, then grill the brats. The beer makes all the difference! YUM!
I guess I don't know anything about making beer. I don't know how much you can deviate from the recipe and what comes out in the end still be potable. Good luck though!

I don't dry my own malt, so no, I won't do that. I'm thinking I'll add some smoked wood pieces into the mash, that should do the trick.
