Wow, isn't that ambitious? Are you going to "dry their (your) malt over fires made from beechwood logs"?

is it? * shrug * beer is beer. why not try to make the best beer that you can?

I don't dry my own malt, so no, I won't do that. I'm thinking I'll add some smoked wood pieces into the mash, that should do the trick.

I guess I don't know anything about making beer. I don't know how much you can deviate from the recipe and what comes out in the end still be potable. Good luck though!

well for every beer in the world there is a different recipe. there's a lot of room for variation and every little thing you do will effect the taste of the beer. generally I have a system work out that I alter by adding different ingredients at certain times. it seems to work well.
