I have altered my grilled cheese to Jarlsberg (or mimolette) with sharp dijon. It may not be perfect, but it's where I am.

later, I'll be at the corner of Brie and cranberry mustard.

I have the whole pms excuse though- you won't.

Yeah, I think most of the grilled cheeses we/you made started with something in the "Swiss" realm. I was using the Havarti because I had it handy, but I think next I'll try the Dubliner cheddar I have (probably with a different mustard)

yeah- and I know I'm risking certain death here, but that's pretty much all the use I have for Swiss...
