Tamales came out wonderful. I want to make them again soon. I also made the stuffed ricotta cheese shells with parm cheese too. And a meat tomato sauce on top with motzarella cheese melted on top. I saw some organic shortening substitute in the health food store the other day. I want to pick up some and use it and I can let you know how it is when I do.

So, I bought a tub of the non-hydrogenated vegetable shortening and I'm sad to say it ruined two recipes, including my own birthday cake. It makes things dry and flat. We tried making biscuits twice and also the cake and each time the result was very disappointing. :-(

Thank you for following up with me, and saving me money and time. I won't buy the non-hydrogenated vegetable shortening for enchiladas. Sorry also it didn't work. Damn I was hoping it would. Hopefully you got another sweet cake for your b-day...
