Hmm..."Beyond the Sea" might not be a bad one to try, although it doesn't really give you a taste for how Mulder and Scully usually operate, since Scully is typically the skeptic. If you just wanted to watch a single episode, you couldn't go wrong with "Squeeze" from first season.
