That sounds delicious. I am impressed with Dave’s beet growing prowess. I never seem to have much luck. Is that a propane canning set-up? Do you pressure canning as well?
We pressure canned the beets yesterday and last year did venison but so far usually we hot bath can things like tomatoes, pickled beets and relishes. The heat is supplied with propane. I think he originally got the set up for a big pot that he uses to fry fish and potatoes. He grows lots of beets and said that quite a few got nibbled by some little critter this year and ruined, probably a mouse.

We grew lots of beets this year, but never made borscht. I think my mom did, though. Maybe we will next year.
