Would you mind sharing your vegetable soup recipe? I've been looking for a good vegetable soup recipe rather than simply throwing stuff together haphazardly. :^)
Well, mine is pretty haphazard. What made this soup better for me was I only used a couple flavorings. Usually I use many. This time I used one vegetable bouillon cube and a big spoonful of Better Than Bouillon Sautéed Onion paste - that was the only flavoring. Less is better perhaps - at least to my taste buds.
I also used a big can of light kidney beans; regular sized cans of whole kernel corn, garbanzo beans and black beans; a quart of Dave's frozen cooked tomatoes from his garden; 4 carrots, celery, 2 onions, 2 green peppers (which I sautéed first in some olive oil) and some precooked green beans from Dave's garden and precooked frozen lima beans. I think it wasn't so much the vegetable ingredients - it was the flavorings that made this soup. You could use any vegetables you have. I need to make it vegan so I can share with my grandsons. Better Than Bouillon seasoning paste is good stuff - it comes in other flavors too. I use the mushroom flavor all the time for vegan gravy I make.
