Apparently all this Christmas cooking and baking I've been doing has flipped a switch in my head, because now it's like I need to cook or bake something every day. It's been sort of nice, actually. I definitely would not have had the energy to do this when I was working, so I guess I might as well take advantage of this, uh, lull ( Read more... )

How cheesy are you feeling? Because I love the Barefoot Contessa's cauliflower gratin recipe. Otherwise, I often bastardize one from The Complete Vegetarian Cuisine which is basically sauteing onion until translucent, stir in garlic, tumeric, coriander, cardamom, salt and pepper, saute another couple of minutes, add cauliflower and a little water, bring to a boil, cover, turn down heat and steam for 10-15 minutes. I can look up exact recipe if you want, but it's pretty easy to wing it.

Also, cauliflower soup is awesome during winter.

I'm on the fence, you see. Because I was going to make potatoes au gratin. But I could just as easily make the au gratin cauliflower, which does sound delicious. But I was initially thinking more in the direction of your second recipe, something with some spice.
