My not!Gundam story in an anthology!
A while back, I wrote an original story inspired by Gundam Wing; if you read it and squint really hard, you can even figure out which of the pilots provided the inspiration. It's called "Steel Rider," and is set in a version of the Wild West. With Gundams. Telepathic Gundams whom only women can pilot.
