The Joys of Matzoh, or something like that

Keep in mind the cardinal rule of cooking with matzoh: if can you imagine that chipboard, if treated this way, would be tasty then you have a winner! And aren't you excited to see our Kosher for Passover plates! Nothing but Target's best (circa 1991)! At least cutlery is easy to Kasher.

So the veggie kugel (zucchini, potato, carrot, shallot, egg, matzoh meal) that I made for the first night seder on Monday was GBD* on top but sort of unpleasantly texture-less down under. Tasted great (I added tons of fresh herbs) but boring and, of course, I had half of a 9x13 pan of it left. Thus was born THE MIGHTY KUGEL BITE! Which is what you get when you use your nice clean hands to scoop up the soft bits and shape them into little patties and pan fry them. YUM!




Of course, sometimes just a few accompaniments are all you need to elevate a little matzoh. I LOVE good gefilte fish! And you gotta have horseradish (w/ beets traditional in our family). Add a little creamy Irish Breakfast tea and I'm ready to face the day - or to read the latest installment of copperbadge's Torchwood epic!




Mmmm, butter, brown sugar, bittersweet chocolate, almonds, kosher salt - the matzoh should just be a delivery vehicle but it actually adds to the whole.
