Towards Good Food

Feeling creative recently -- and conveniently out of peanut butter -- I made my own with coconut oil.  Among the many virtues of coconut oil, its ability to stay solid at room temperature without being hydrogenated (and thus full of nasty trans fats and mostly rancid oil) makes it a great choice for smoothing out peanut butter.

I think palm oil stays solid, too. Although, I prefer plain peanut butter. If you stir it really well each time you scoop some, it should be spreadable. It's pretty good on brownies.

It does, but it's not nearly as healthy for you as coconut oil is. I've used it to make soaps before.

Plain peanut butter is fairly good, and I may keep buying it freshly ground from HEB. I just wanted to try making my own "creamy" spread.
