So one other bit of good news from yesterday (buried in all the craziness): Since the doctor told me to lose weight and I've started cutting portions, I've apparently lost 4 pounds (that's assuming a minimal discrepancy between the two scales). For cost savings, I recommend focusing on frozen fruits and veggies and stocking up on canned goods when they're on sale. Stick mostly to what's in season for fresh produce. Thankfully, we're heading into summer, so we'll have lots more inexpensive choices available. :)

The exchange units are based on the old system of 'grammes of carbohydrate' which is literally based on the amount of physical carbs in a portion of the food. Since most of them come out as 'approx. 10 grammes' - usually 2-3g either side of this - it is deemed easier to just say its '1 exchange unit'
