OMO! She does? Bake some bb! I swear they're really easy to make. Requires no baking whatsoever! No-bake varieties are no-brainers, I kid you not! All you need is a good recipe ;D Mom wanted to make the base out of cake, but I had to violently protest - BISCUITS AS THE BASE IS SO MUCH YUMMIER. OMG.
350g Digestive biscuits (crushed) 120g melted butter 375g Philadelphia cream cheese 120g castor sugar 250ml thickened cream 15g gelatin (dissolved in 1/2 cup boiling water) 1- 1 1/2 lemon (juiced)
1. Mix crushed biscuits with melted butter. Press mixture into a pan, refrigerate to harden for a few minutes. 2. Beat cream cheese and sugar until mixture is well combined. 3. Whip fresh cream until it has thickened in a new bowl. 4. Combine ingredients in step (2) with cream in step (3). 5. Mix in gelatin, lemon juice and berries. Pour into the pre-made base and refrigerate overnight until the cheese mixture has set.
Christmas is such a lovely time for baking, no college, no assignments... but since you're working, it's a little hard to factor in baking since you'd be too tired by the time you're home.
Probably you'd get lucky come christmas when someone you know makes some! But then again, cheesecake isn't very common during christmas is it? T_T
