Red Lentil Soup.

Ingredients

2 cup red lentils
2 medium sized onions, chopped
2 carrots, sliced
1 tbsp tomato paste
1 tbsp pepper paste 
2 tsp black pepper 
12 cups of water
Sea Salt (optional)
Lemon Juice (optional)
Paprika (optional)

Method

1. Rinse the lentils.
2. Throw everything into a big stock pan.
3. Bring just to the boil and then cook on around half for approx 25 minutes.
4. Blend until smooth. I use a hand blender which is much easier than doing it batch by batch in a food processor or blender.
5. Serve with hot rustic crusty bread and butter (Or vegan alt)
6. Use sea salt at the table so that people can choose whether to salt or not. Alernatively squeeze on a little lemon or sprinkle with paprika.
