Sweet Potato and Mozzarella Bake Recipe.

Ingredients

2 large sweet potatos
1 red onion
1 yellow pepper
1 red pepper
1/2 head of garlic
Olive oil or spray oil if you prefer
Black pepper
5oz Mozzarella cheese, sliced as thinly as you can

Method

1. Preheat the oven to Gas mark 6/200 degrees C/400 degrees F.

2. Cut the sweet potato into rough 1-1/2-inch cubes. Remove tougher outer skin of red onion and halve, then cut each half into 4 to 6 segments. Seed the peppers and cut into 1-inch squares, and separate the cloves of garlic.

3. Put everything into a large casserole dish and give the vegetables a good coating of olive oil or spray oil. Season with black pepper.

4. Cook for 45 minutes, by which time the vegetables should be cooked through and be browned in places.

5. Remove dish from oven and place the thinly sliced cheese on top of the bake, and put it back in the very hot oven or under the grill/broiler until the cheese has melted and turned slightly brown on top, about 5 to 10 minutes.

6. Serve with side salad.

Alternatively leave out the sweet potato and add equivalent butternut squash and serve with crusty warm bread and salad.

Try different combinations of vegetables with and without sweet potato or other potato.
