Tabbouleh

Ingredients

450g/1lb bulgar wheat
120g/4oz fresh basil, chopped
120g/4oz fresh coriander, chopped
120g/4oz fresh flat leaf parsley, chopped
8 tbsp lemon juice 
8 tbsp olive oil
4 beef tomatoes, skinned, seeded and finely chopped
I whole cucumber, very finely chopped (can be peeled if preferred)
16 spring onions (scallions), green and white finely chopped
salt and freshly ground black pepper

Method

1. Place the bulgar wheat in a bowl. Pour over enough boiling water to cover the grains.
2. Cover the bowl with a plate and leave for 20 minutes.
3. Add the chopped herbs, lemon juice, olive oil and seasoning. Stir well.
4. Add all other ingredients, mix together and serve.

If you have time leave the tomatoes until just before serving as they soon go soggy but prepare everything else and chill for one hour.

Looks good served on a bed of lettuce or other leaves.
