The original recipe calls for deep fried potato but I prefer not to deep fry especially when the dish is then fried for a second time so I oven roast the potatoes using a spray oil.
Ingredients
Ikg oven roasted potatoes
3 cloves of garlic, minced
1tbsp coriander
2tbsp fresh coriander, chopped
1tsp lemon juice
1tbsp tomato ketchup
1/4tsp paprika
1/4tsp garam masala
1tbsp oil
Method
1. Mix all ingredients together except for potato in a bowl.
2. Transfer to a pan and fry together for approx 1 minute.
3. Add potatoes, fry a little longer mixing everything together.
4. Serve.
