Ingredients
3 large red tomatoes
2 Zucchini
1 Onion
1 green chili pepper
3 garlic cloves Spray oil
Olive oil
Salt to taste
Method
1. Cut tomatoes, zucchini, onion, and chili pepper (deseed) in half. Spray with oil and slow roast in the oven.
2. Roast the garlic cloves whole without oil at the same time.
3. Remove tomato skins and deseed. Remove pepper skin. Mash all roasted veg together.
4. Squeeze the roasted garlic from it's skin and add to mix.
5. Add a little olive oil and salt to taste.
Serve with green salad and pita.
Can also be mixed into some soaked couscous or rice and used to stuff other vegetables.
