Ingredients
450g/1lb chickpeas, soaked overnight, cooked
3 cloves garlic
2 tsp coriander
2 tsp cumin
2 tbsp chopped parsley
sea salt to taste
Method
1. Preheat oven to 350f.
2. Blend one quarter of chick peas with garlic, coriander, cumin and parsley.
3. Gradually add remaining chick peas, blending into a paste and adding a little water if needed.
4. Season.
5. Roll into small balls.
6. Spray a baking sheet with spray oil and place falafel on sheet spraying each one with a little more oil. Oven cook for approx 15 minutes.
These can be cooked by deep or shallow frying but I like to keep fat to a mimimum.
