Roasted Red Pepper Dip

I made the most amazing dip last night to eat with my Wasa rye crackers (no wheat)

2 whole red peppers (roasted and skins removed, or buy them already done)
2 garlic cloves
1/2 jalapeno (less if you don't like spicy)
8 oz of cream cheese (1 box)
1/4-1/2 cup of Monterrey Jack cheese, shredded
spices to taste (cumin, pepper, salt, brown sugar, etc) ( Read more... )

I don't have Wasa crisps nor do I have a processor, but this dip sounds awesome! I'll have to make it sometime! Thanks for the recipe!

You could do it without a food processor, but it would be pretty time consuming...you can get those little food choppers for about $10 -- just halve the recipe so it will fit in the little thing

Me and my dog had a party with it last night.

If you're hand mixing, let the cream cheese sit out and soften, so it's easy to mix and then after you mix all the ingredients in, put it back in the fridge for it to harden up a bit

Sounds tasty! Here is a veggie dip of my own creation.

Whole cajun pepers, finely chopped(to taste)
1 brick cream cheese.
whole garlic cloves crushed (to taste)
1 tsp dark rum (I like Captain Morgans)
1 tbs Kalua
one good dollop of sour cream
1 small sprig of Rosemary, finely chopped
1 tbs finely chopped Cilantro (before it flowers).
1/2 cup spinach, finely chopped.

Mix all ingrediants well, top with a light dusting of crushed peppercorns and west indian paprika. Enjoy at room temperature!

Sometimes, when I'm feeling adventurous, I will add some freshly chopped Greek Oregano -a very strong variety. Use sparingly.
