¤ Thirteen-bean soup ¤
1-1/2 cups of any multi-bean soup mix, soaked overnight and drained, such as
Bob's Red Mill 13-Bean Soup Mix,

6 cups water
3 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons paprika
1/4 teapoon cayenne pepper
(or: 7 teaspoons of *Bob's Red Mill Bean Soup Seasoning Mix)
6 garlic cloves, minced
1 tomato, diced
1/4 to 1/2 teaspoon sea salt, added 5 minutes before serving
1/4 cup cut cilantro or 1 scallion, green and white parts both, for garnish
1 24-ounce container (Forager) cashew yogurt (Cashewgurt), for garnish
unsweetened applesauce (optional), for garnish
warmed pita cut with kitchen scissors into wedges, for garnish, or
(Beanitos) blackbean tortilla chips or kale tortilla chips
§ Soak 1-1/2 cups of any multi-bean soup mixture overnight, then drain and rinse the beans.
§ Put the beans into a very large cooking pot. Add 6 cups of water and bring it to a boil.
§ Stir in 3 teaspoons of ground coriander, 2 teaspoons of ground cumin, 2 teaspoons of paprika, and 1/4 teaspoon of cayenne pepper. (Or add 7 teaspoons of *Bob's Red Mill Bean Soup Seasoning Mix.)
§ Mince and add 6 garlic cloves. Dice and add 1 tomato.
§ Return the heat to boiling, then reduce the heat to medium-low and simmer the soup, partially covered, for 75 minutes or longer.
§ (The Bob's Red Mill 13 Bean Soup Mix package calls for cooking the beans for 3 to 3-1/2 hours and then adding 1 cup of chopped onion and 1 15-ounce can of tomato sauce or 1 quart of tomatoes; also adding 1/2 to 1 tablespoon of chili powder and 2 teaspoons of garlic powder or 2 minced cloves of garlic.)
§ Stir the bottom of the pot occasionally to ensure that the soup is not burning. Add more water if it's needed.
§ Taste the beans for tenderness. Once the beans are fully cooked, season them with salt. Start with only 1/4 teaspoon of salt because if you serve the soup with tortilla chips they will provide more. Then cook them for 5 minutes more.
§ Garnish the bean soup with cilantro or chopped scallions (optional) and pass cashew yogurt or unsweetened applesauce to go on top of each bowlful. Serve it with warmed pita wedges, or with kale or blackbean tortilla chips.
