Salsa blackbean hummus, or other thick sauce or dip or hummus
      (https://decemberleaf.livejournal.com/248840.html)
      or (Woodstock organic unsalted) peanut butter
(Rigoni di Asiago) wild lingonberry fruit spread, or other berry spread
      or, in season, a juicy ripe peach or pear
2 or 3 sprigs of fresh thyme,
      or lemon balm, mint, rosemary, sage, or wood sorrel
1 large celery stalk (best ever), cut diagonally into wedges,
      or other crunchy vegetables
1 large kale leaf, cut into bite-size pieces; or spinach
2 or 3 slices (frozen) wholewheat bread per person:
      1 or 2 (Vermont Bread Company) (cinnamon raisin) English muffins,
      or 2 or 3 slices (People's Bread Company) spelt Vegan Multigrain Bread,
      or 1 or 2 6-inch (Maria and Ricardo's) vegan soft corn tortillas;
      or 2 or 4 large long thin slices of sweet potato

§   Buy or make Salsa blackbean hummus, or other thick sauce or dip or hummus. Or get out some peanut butter.

§   Get out a jar of fruit spread, or cut up a juicy ripe pear or peach.

§   Get out some English muffins, or (frozen) wholewheat bread slices, or (frozen) corn tortillas; or cut long thin slices of a sweet potato. Toast them lightly or simply defrost them. (Toast sweet potato slices well-in a bread toaster or in the oven.)

§   Cover 1 slice generously with salsa hummus or thick sauce. Cover the other slice thinly with fruit spread (or in late summer with thin slices of a juicy ripe peach or pear).

§   Strip the thyme leaves off of their stems and sprinkle them on the hummus.

§   Use kitchen scissors to cut a celery stalk into small thin wedges. Place them on the fruit spread and press them into it with the back of a spoon.

§   Strip the center stem from a large kale leaf and use kitchen scissors to cut it into bite-size pieces. Pile them on top of the hummus.

§   Push the slices together firmly. Use a sharp serrated knife to cut the sandwiches into quarters, or leave English muffins or tortillas or sweet potato sandwiches whole.

§   For a picnic, or to take to work, wrap the sandwiches in paper towels and put them in plastic containers. Add extra fresh fruit or vegetables or Chocolate pocket muffins alongside them. They may also be stored in plastic or glass containers and refrigerated or frozen.

¤ Kale & lemon sandwiches ¤ ("the ultimate sandwich!", if messy)

§   1 bunch kale, lightly steamed and set aside in a colander
§   2 slices Mestermacher bread, toasted; spread with:
§   4 to 6 tablespoons hummus (preferably prepared without oil or tahini),
§   4 green onions, thinly cut and spread thinly,
§   1/2 bunch cilantro or parsley, cut and spread thickly,
§   1 large lemon, cut in half with a very sharp knife,
    then sliced very thin and cut from the centers of each slice outward,
    (which guarantees less rind and pith and seeds per bite);
    then cut into quarters and scattered over each open-faced sandwich;
§   another large lemon, to zest and juice and sprinkle over and toss with the kale in the colander, then piled on top;
§   lemon pepper to sprinkle over all.
