Lechon

I'm ashamed to admit, I do not like lechon at all. I never used to eat it. I actually used to find it so offensive, seeing a dead animal -with head and all- spread in all its glory in the middle of the table. When Hiro (then barely 3 years old) first saw lechon, he freaked out. He thought it was his toy pig.

Until now he doesnt eat lechon.

To think that is a full grown pig that was roasted. In Spain, they roast months old pig, the skin is thinner. Oh well, like they say eat or be eaten. :P

I grew up eating lechon. In fact it was a must that we have lechon every Sunday. What makes lechon Cebu as well as that of Leyte different from the others which I have both tasted are the herbs that are placed in its belly before roasting. Theres a whole slew of herbs there - garlic, peppercorns, lemongrass etc which makes the pig so flavorful that no need for Mang Tomas just good old vinegar/garlic. Mang Tomas will take away the whole taste of it.

I saw the episode 2 times since it was aired back to back. I am glad that Tony Bourdain had a good experience and I am so glad he asked why Filipino cuisine doesnt get the same attention as our Asian neighbors. His reply was funny.."because Filipinos are too nice" LOL
