pan fried. we diced the potatoes, rolled them in corn meal, then cooked them in a iron skillet with some olive oil. 10 minutes or so covered, then open air to make 'em nice and crispy.

When I move down there I will have to try one of those. My sister-in-law went to RIT also, and she makes a plate that is 99% as good as the original.
