They tasted good, but I have to cut back on the carbs again now, hence the playing around with coconut flour. I've been using some of the recipes from Elena's Pantry.
I've never seen sunken bread from my breadmaker, but the first loaf I made in it was inedible due to my misreading of the recipe (I bunged in a tablespoon of salt instead of a teaspoon). *g*
Actually, the first one I got wouldn't *heat*, I exchanged it for a second one that wouldn't *knead* and the third one I gave up on exchanging, it would produce doorstops. :^)
I now have a good one, but my local store only has expired yeast. I'll have to order some over the internet once I figure out where. :^)
I must admit we don't use our bread maker to make a loaf because I hate the huge hole the stirrer makes in the finished product. So we make the dough and either pop it into a bread tin and cook it in the oven, or make rolls and do the same.
That's what I figured I'd do with the lower quality breadmaker if it turns out this not-raising thing is a persistent problem. At least I can still set it to making up dough.
I played with a few (they were being given as a gift to a friend for his birthday) before finally settling on adapting the chocolate cupcake recipe from Nigella Bites. I left out the cocoa, and added slightly more than the equivalent of ground green tea (I didn't have any matcha, which is usually what's recommended, so I opened up some green tea bags and ground the leaves in a mortar and pestle). I topped them with a glaze using green tea as a substitute for water.
I made the daleks specifically for eating while watching the show with friends. Eventually, by request, there were also old school gold and silver daleks, and some purple ones, but I seem to have lost the photos.
Olives! That's a really good idea. I'll try that next week. Why do you think it makes the bread expand more?
I think it may be something to do with the brine (though I do wash them).
Another good flavouring is fried onions and caraway seeds in white bread, which is the closest I've got to something I had in Poland.
I've got a new washing machine coming tomorrow, so the kitchen's out of bounds until 'the men' have been (because it's unnaturally tidy at the moment :-), but I'll have a go at some cupcakes on Friday.

I love the daleks. It's nice to see that someone's embraced the new colours.
And the breadmaker experiments are impressive. The bread tends to climb out of mine, especially if I add olives.

Glad to hear your breadmakers are not instantly flammable. I had some qualms.
