easy potluck recipe - help!

tomorrow night is a potluck for my spinning guild. every july meeting there's a dinner/potluck, and this year i can go because it doesn't conflict with the falcon ridge folk festival weekend ( Read more... )

Hmm. Hummus is always good, but I don't know of any recipes for making pitas or anything that don't have wheat gluten. Try VegWeb.com, I know they have gluten free recipes (and articles) as well as vegan and veg.

i know, i thought of hummous, as i love it so. but if i don't have bread, it almost seems like a farce to serve it to a celiac. i will look at that site - thanks!

I have some great casserole recipes that are vegetarian-sort of-they contain dairy, but I have nothing that is gluten-free!

Quinoa! The grain cooks up sort of like the wheat in tabuleh, and it's fast, about 15 minutes. At the beginning of cooking, I flavor it with ground ginger and crushed red pepper, throw in some brocolli for the last few minutes of steaming, then add lemon juice, salt, pepper, and pine nuts once it's off the stovetop. It's a good side but we eat it as a light dinner at least once a week. It reheats well, but better to add fresh steamed brocolli if you can.

that sounds excellent! i'm not sure about tomorrow night, because i won't be able to heat food, and we'll be eating at least 30 minutes after i finish cooking, so it's not the like broccoli would be hot/steamy. quinoa might be a better substitute than buckwheat in the tabouli, though.

I've always meant to try quinoa in tabouli but haven't gotten around to it yet. If you do, let me know how it turns out.
