It started out as your basic buttercream with several tablespoons of caramel sauce mixed in. My kitchen was rather hot, so the icing didn't keep its fluffy consistency and kind of melted, but it ended up being very good anyway.
is there a special recipe you used for the caramel apple cider cupcakes? for some reason, they don't seem like they'd be as rich as the chocolate ones.
They're a lot lighter than the chocolate ones, actually. I just started with a basic white cake batter, but instead of using water in the mix I used apple juice. Then I added liberal amounts of cinnamon and pumpkin pie spices to the batter until I was satisfied that the mix was cider-y enough. For the filling I used caramel sauce plus just a dash of apple juice to moisten the cake.
I used boxed mixes for both of these because I didn't have time to do anything from scratch, so they're pretty easy. For the chocolate-covered strawberry cupcakes, make the batter as directed and fill the cupcake tins about half full. Place a couple strawberry slices on top of the batter and cover them with the remaining batter. You bake the cupcakes according to the instructions, then frost with chocolate buttercream (regular buttercream + cocoa powder to taste) and top with some more strawberries and cocoa powder.

To do the filling, you cut a cone out of the top of the cupcake with a small paring knife, cut off the excess cake from the cone to make a 'cap', and fill the hole with some caramel sauce plus a dash of apple juice. Cover and frost, then top with sliced apples and a dash of cinnamon and pumpkin spice. Mmm.
Seeing that last picture made me think of an oooooooold dog food commercial, "Luck dog, lucky dog, I'm a lucky dog!"

Well, and someone who goes by "The Wonder Llama" just has to be cool. I want llamas or alpacas someday. Alpacas would probably fit my lifestyle more (they can thrive in smaller yards) and they have wonderful wool for felting. I'm going to learn how to felt.

Alpacas would probably fit my lifestyle more (they can thrive in smaller yards) and they have wonderful wool for felting. I'm going to learn how to felt.
