Hi! I came back from the Caribbean with some really good light rum, and I want to make my Dad some cupcakes with it ( Read more... )

Pina Colada cupcakes:
300g flour
2 teaspoon baking powder
1 teaspoon salt
125g unsalted butter
250g sugar
2 egg, diveded into yolk and eggwhite
1 1/4 dl pineapple juice
0,6 dl white rum
75 g grated coconut

For the icing:
2 pasterioused eggwhites
1 pinch of salt
300g icing sugar
75g grated coconut

1. Heat the oven to 180 celcious degrees
2. Mix flour, baking powder and salt.
3. Beat butter and sugar untill creamy
4. Add the egg yolks one at a time and mix.
5. Add the dry ingredients and put in the fluid and mix until the batter is smooth.
6. Add the coconut.
7. Beat the egg whites with salt untill stiff and gently fold it in the batter.
8. Fill the cupcake liners 2/3 with batter and bake for 20.25 min . Let them cool on a rack.

Icing:
1. Whip the eggwhites with salt untill stiff.
2. Add icing sugar on tablespoon at the time while you keep whipping.
3. Fold in the coconut.
4. Add as much icing sugar untill the icing will hold itself the way you want.
5. Ice the cold cakes and sprinkle with toasted coconut.

Awesome! I can use my converter for the amounts, but what was that next to the white rum?

0,6 dl white rum

I'm not sure what that is? Sorry, I feel so ignorant!
