mocha cupcakes

My best friend is the biggest coffee lover I know, so for her birthday I made some delicious mocha cupcakes!

Vanilla cakes with a chocolate-mocha filling; topped with mocha buttercream, chocolate shavings and a chocolate-covered coffee bean. They were definitely a hit! :)

Those look delicious! Would you mind posting the recipe for the chocolate-mocha filling?

I just made a simple chocolate mousse and used some strong coffee in place of the water in the recipe. I piped it into the cupcakes instead of letting it set in the fridge.

I picked them up at a Canadian bulk food store; they were in the same aisle as the chocolate covered raisins, peanuts, almonds, etc.
