omg do you have a recipe for the chocolate caramel ones?? and yay sofla, i'm from jupiter.

i used the recipe for chocolate cupcakes from http://cupcakeblog.com which is here & tossed a bit of caramel in the middle.

chocolate frosting:
1 stick (1/2 cup) butter
2/3 cup hershey's cocoa powder
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract

melt butter, then stir in cocoa. add powdered sugar and milk, alternating, & beat. stir in vanilla. makes about 2 cups of frosting.

for the caramel topping, i simply melted down caramel in a saucepan on medium heat, adding a bit of water as i went to break down the caramel, whisking every minute or so. don't add more than, like, a teaspoon or two or it'll be too runny. once the caramel is smooth, dip the tops of the cupcakes in & let them set for about 20 minutes, then top with chocolate frosting.

hello fellow south floridians :D i'm in miami-dade.
also, your cupcakes look delicious! how do you get the icing to be so tall and stiff looking though? i use store bought icing and it always kinda melts and deflates before it finally stiffens up.
and do you use a certain tip to get the thick soft serve look?
sorry for all the questions, i just really want to get that super professional icing look on my cupcakes. <3

this is the recipe that i have in the book i keep. i don't follow it exactly, but it'll give you the basic idea. generally, mine have more cinnamon & i usually make the apples with brown sugar. but, here ya go. enjoy.

Apple Topping
3 tbsp unsalted butter
1/3 cup granulated sugar
3 granny smith apples, peeled, cored & thinly sliced

Place butter & sugar in a large pan over low/medium heat. Stir to dissolve sugar. Add apple slices & cook for 8-10 minutes or until apples are lightly caramelized. Remove apples & let cool completely.

Cinnamon Cupcakes2 1/4 all purpose flour ( ... )

there isn't exactly a recipe for them as i just kind of threw them together, but i'll try to write one out if you really want it. they were, easily, the best batch of cupcakes i've ever made.
