this is the recipe that i have in the book i keep. i don't follow it exactly, but it'll give you the basic idea. generally, mine have more cinnamon & i usually make the apples with brown sugar. but, here ya go. enjoy.

Apple Topping
3 tbsp unsalted butter
1/3 cup granulated sugar
3 granny smith apples, peeled, cored & thinly sliced

Place butter & sugar in a large pan over low/medium heat. Stir to dissolve sugar. Add apple slices & cook for 8-10 minutes or until apples are lightly caramelized. Remove apples & let cool completely.

Cinnamon Cupcakes
2 1/4 all purpose flour
2 1/4 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 tsp salt
9 ounces (2 sticks + 2 tbsp) unsalted butter, softened
1 1/2 cups sugar
4 large eggs
1/2 tsp pure vanilla extract
1 cup whole milk

Sift together flour, baking powder, cinnamon, & salt. Set aside.

In the bowl of a stand mixer, cream butter & sugar until light & fluffy. Add eggs, one at a time, beating well after each addition. Scrape down the sides if the bowl occasionally. Beat in the vanilla.

On low speed, add the flour mixture & mix until flour is barely incorporated. Add the milk & mix until just smooth.

Pour into cupcake liners until 2/3 of the way full. Top with the apples.

Bake at 325F for about 15-20 minutes.

Cinnamon Frosting
3 sticks unsalted butter, softened
1 1/2 cups confectioner's sugar
1 tsp ground cinnamon

Beat the butter until soft & fluffy. Add the confectioner's sugar & cinnamon & beat until light and fluffy.
