So, I'm absolutely inlove with this vegan cupcake recipe. I've been using it for months with splendid, perfect cupcakey goodness as a result.

1 1/2 cups flour
1 cup sugar
1/3 cup cocoa
1/2 teaspoon salt
1 teaspoon baking soda
1 cup water
1/2 cup vegetable oil
2 tablespoons vinegar
2 teaspoons vanilla

Have you used the same bottle of vinegar each time? If you have a new one, it could be a little stronger tasting than the previous bottle.

I'm not sure what to do about the density - this is the recipe I use, and never had a problem.

Same exact bottle. I can only tell because the bottle is near empty and that's the only thing its used for.. haha.

maybe your oven thermostaty thing is on the blink?

my cupcakes came out all dense when I changed ovens I had to adjust the temp a lot to get it good again

Maybe... But even the raw batter tastes more vinegar-y than usual, so I'm not sure.

Get new baking soda. If it's got a little damp it won't be as effective, and that's what reacts with the vinegar to a) make them rise and b) take away the vinegar taste.

Argh. Upon reading your comment I realized I'm just retarded. I switched it and started using baking powder instead of baking soda.

It could be worse. I've used custard powder instead of baking powder.
