A Question!

So, I'm absolutely inlove with this vegan cupcake recipe. I've been using it for months with splendid, perfect cupcakey goodness as a result.

1 1/2 cups flour
1 cup sugar
1/3 cup cocoa
1/2 teaspoon salt
1 teaspoon baking soda
1 cup water
1/2 cup vegetable oil
2 tablespoons vinegar
2 teaspoons vanilla

The last two times they've been rather dense, and taste strongly of vinegar. Last time I assumed I just didn't follow the recipe as closely, but this time I measured every single ingredient out and double checked them before mixing them. Yes, wet and dry ingredients were mixed seperately, and dry was added to wet ingredients in thirds.. So I'm not sure what the issue is... Has anyone else managed this?
