I made the chocolate cupcakes with regular milk and they were delicious!

I've substituted regular milk and it's been just fine. The only time I ran into a little bit of trouble was when i substituted regular yogourt instead of soy yogourt and my cupcakes came out REALLY moist, almost too moist. But still tasty.

I don't know about milk and cider, but I love caramel apple cider at Starbucks, and it's topped with whipped cream, which doesn't curdle.

I don't know.
