How long after taking your cupcakes out of the oven do you remove them from the pan?

Do you put them on a wire rack to cool?

I generally leave my cupcakes in the pan for a couple of minutes before removing them so that they are cool enough to touch.

(Keep in mind if you leave them in the pan for longer that the heat from the pan will continue them)

After I've taken them out of the pan I will put them on a wire rack to cool and be iced.

The general recommendation is to leave them in the pans for 5 minutes, then move them to a cooling rack.

My mother forbids me to leave them in the pan, so I take them out as soon as I can wrangle two forks into a pair of tongs.

i take them out right away (i've got some weird technique that involves holding the pan at nearly a 90 degree angle to the wire rack, and quickly getting them onto the rack).

and yes, i use a rack. i've noticed a big difference in how well they come out of the papers when they cool on a plate or counter rather than on a rack, where the cool air can circulate below them.

I've been taking mine out as soon as they come out too because I've noticed sometimes you'll get a little bit of condensation on the bottom of them if you don't.

I take my cupcakes out of the pan within about five minutes of coming out of the oven and cool them on a wire rack.
