Candy Cane Cupcakes!

Dec 08, 2007 17:03

Today I made some candy cane cupcakes in the spirit of Christmas!

I flavoured them using Celestial Seasonings Peppermint tea and little candy cane chunks.
Inspired by this post here: http://community.livejournal.com/curiouscupcakes/363162.html?#cutid1

Thanks to everyones input in my icing brainstorm. I used this recipe: http://allrecipes.com/Recipe/Read more... )

just a quick question-

I've never used a frosting of that type before. One of the comments on the recipe says it will dry out and become meringue-like if left uncovered. Do you think you could quickly broil the frosting to get brown meringue-like tips, and to dry it faster? I'm asking you since you've worked with the frosting before.

Other than that, beautiful cupcakes, I'm sorry you didn't get to eat one.

They got made and eaten so quickly I don't really know what might have happened if I left them out longer. I suppose you could experiment with broiling them. The recipe does make a generous portion so there is room to experiment. This is my first time making this frosting so I'm not super experienced -_-;;

If you want to make meringue topping frosting I suggest looking at this page :http://cupcakeblog.com/index.php/2005/9/ricotta-raspberry-almond-cupcakes-with-citrus-meringue-frosting
She uses a blow torch to brown it though. I recommend sending her note about other options because she's super cupcake savvy :D
