I tried making strawberry upside down cake. After arranging the strawberrie on the bottom of the cupcake pans for what felt like an eternity, I poured the batter over and noticed that the strawberries started floating!!! I dumped them into the oven. Lo and behold ( Read more... )

The fruit for my pineapple upside down cupcakes stayed down at the bottom. I'm thinking that is probably because of the heaviness of the batter. What kind of batter did you use?
