i made a post here yesterday reguarding low calorie cupcakes. i was thinking a white premade cake mix with a can of diet 7up and an egg white. as far as frosting goes, i'm going to mash up rasberries into cool whip free or lite or whatever it's called. yay or nay?

sounds good :)

other suggestions: applesauce instead of fat (you should be able to use low-cal applesauce, or make your own from real apples-- just nuke diced apples in a covered container for 15 mins and mash), and splenda or splenda baking mix (if you make your own from scratch).

I <3 using applesauce. Extra moist and healthy for the win! (I even have a low-fat raspberry applesauce that was super tasty to use)

Make sure the sweetener in the soda is splenda. Aspertame breaks down in the heat of baking.

what do you mean by it breaks down? i heard that the egg white(s) keep it together
andddd i looked it up online and i don't even need egg whites!
ahhh so confusedd haha i want my frends to eat them and not bitch about the calories

I think the recipe should work as you have it, and I do suggest using the egg white. I haven't done cupcakes this way, but I have made a chocolate cake using Devil's food cake mix, Diet Dr. Pepper, and one egg white. Turned out fabulous! And the batter seemed like it would hold together in cupcake form :)

Hm, now I want to make diet cupcakes, too...

Hello darling--

I am concerned about the use of Diet soda in this-- Some of the chemical compounds, when heated to the temperature required to make cuppies, they meld together and form formaldehyde.

Not so tasty.........

I would recommend using some other type of soda with low calories already. Even if you used a super sugary soda, it still wouldn't add as many calories as if you used the eggs and oil. :)

Sorry to be a bother, I was just concerned... :3

one suggestion about the frosting, I'd mash the berries first and then strain the juices and then fold in. Frostings might get too thin or liquid-y from all the extra juice.

Sounds Yummy. I heard from my GM that soda pop like 7up or Fresca is a Weight Watchers trick. Best of Luck.
