Pancake mix?

I don't know if this counts as as cupcake, or just a cupcake shaped recipe, but has anyone ever tried using pancake mix like Bisquick to make cupcakes? I just realized I had some around here and some chocolate chips so I was thinking about making chocolate chip cupcakes. I was thinking about doing that same thing yesterday and I may try it today. I say go for it? I never hurts to try new things. =)

... a Bisquick cookbook... let me go pull it out.

Recipes for bars, pies, cookies... let's look for a chocolate chip recipe, maybe it can be tweaked... oh, here's a cake recipe

Brown Sugar Chip Cake...
this calls for different kinds of chips, but I don't see why you can't make it all chocolate chips...

1 1/2 c Bisquick
1/2 c packed brown sugar
1 egg
1/2 c milk or cold water
2 T shortening
1 t vanilla
1/2 c flaked coconut
1/2 c miniature marshmallows
1/3 c chocolate chips
1/3 c peanut butter chips
1/3 c chopped pecans

Heat oven to 350
Beat all ingredients in a large bowl.
Bake until wooden pick inserted comes out clean... about 55 minutes.
For cupcakes I'd check it about 20-25 minutes the first time

You could probably skip the coconut and marshmallows, and just put in a cup of chocolate chips...

Thanks. It was middle-of-the-night idea so I don't have a lot of those things but maybe I'll piece something together from the recipe/what I have onhand. Thanks!
