Oh god that looks good. We're much the same with ginger, but I'm definitely going to try cinnamon in my pasta sauce later :)

You only need a touch - unless you are me - as it can get a bit medicinal. In bolognese I use about 1/4 - scant 1/2 a teaspoon.

I should add, if I make bolognese it's usually with about a pound of meat, to give you an idea of ratio. What are you going to make?

When I next see you (we must be due our "once per year" get together soon!) I am bringing you some JR Watkins "Best cinnamon on the world". I don't know whether or not they're exaggerating, but it's certainly the best cinnamon I've ever tasted, and I shall never go back!
