Valentine Dinner

Still undecided about what to have for Valentine dinner. I'm pretty sure we'll have a shrimp cocktail to start, spinach salad with balsamic reduction to go with the main; my husband wants either almond cookies or a blueberry pie for dessert. I'd probably go with Salmon however keep in mind you want a light meal to enable the later activities c;

Personally, I hate all seafood but i'd do the salmon if I was you. Chicken is too boring, oysters make a better appetiser than main, and lamb shanks need something wintery to go with, like papperdelle or mash. That's my 2 cents, anyway!

my husband wants a pot roast and that's fine with me.

we'll have the day together (tomorrow as i'm away working through the weekend), and i'll do mashed potatoes, a butter lettuce salad with roasted mushrooms and some cambazola,,,and dessert is a frozen lemon awesome.

My husband and I usually dine out* for Valentine's Day. There's a few inches of global warming on the roads, with more falling and predicted to continue for days here in the South where we lack the heavy equipment to properly clear roads. Looks like we'll be dining in. I can muster a salad, rib eye steaks and asparagus. I'm attempting to master home made sour dough bread, so Friday's attempt might make it on the plate. I've got enough to bake something for dessert, if I can decide what. That'll have to do. I'm not going out for ingredients. He might make a different request and I'll oblige if I've got the right stuff on hand.

*We so rarely get nights out without the littles, going out is a tradition. We usually walk around near campus and try a new restaurant (since there's usually 2-3 new ones a year), grab a coffee and share a fro-yo.

I am making a salad with romaine hearts, artichokes, hearts of palm, prosciutto, and asiago cheese drizzled with a little balsamic and extra virgin olive oil. Vodka cream pasta for the main (at the request of my other half,) which may or may not include shrimp, and vegan chocolate mousse. Yup, I did say vegan! Again, his request. I made it once, and sure, it's healthier than the dairy loaded stuff, but he loves it for some reason so if I can cut calories with the chocolate part then why not?
