Chestnut recipes?

I've been digging through Pinterest and not coming up with a lot of ideas to use the chestnuts I have in the pantry. Anyone have any ideas besides chestnut stuffing (which LOOKS good - but not something I make a lot) and candied chestnuts ( Read more... )

hehehe! I'm in Arizona so that's a fun idea. I wonder how good of a fire tumbleweeds make? :)

Mostly I've eaten them roasted, peeled and otherwise unadorned. They're delicious all by themselves!

There is a traditional European recipe called Mont Blanc that features them, and there are also various brussels sprouts or cabbage mixtures that call for them, involving butter and au gratin toppings.

I have never made Mont Blanc, only eaten it in restaurants. Joy of Cooking has a recipe for it and there are a few online that call for fresh chestnuts as opposed to canned chestnut puree. You can roast them (don't forget the salt), boil them with fennel seeds, or even cook them like potatoes for a savoury dish. The go well with pork, especially if you're roasting it (put it all in the same tray). I've had a great chestnut cheesecake too, which has chestnut purée instead of jelly.

Hmmm. Not a huge fan of Brussels sprouts. Does the chestnuts make it less "sharp"?

Done right, Brussel Sprouts are usually quite sweet actually (unless you're a supertaster, in which case all bets are off...)

Vague memories of my grandmother's Chinese dish was a chicken stock base with boiled chestnuts, celery and carrots. Sometimes I think there were thin slices of meat. Note that this wasn't made with water chestnuts.
